Ginger & Turmeric Roasted Carrots
FLU SEASON IS UPON US >.< Don’t let your body fall victim to seasonal sickness. Fill it with nutritious foods that will help you get through this infectious time of year. These ginger turmeric roasted carrots are perfect for preventing the sniffles, and taste DELICIOUS.
What You’ll Need:
- bunch of carrots, washed
-1 hot pepper, finely chopped
Preheat the oven to 200°C (400°F). Trim the greens from the top of the carrots if they’re not already trimmed. Hold onto them to make some broth. Toss them in about 2 spoons of olive oil, 1 spoon of lemon juice, freshly grated ginger, freshly grated turmeric, hot pepper and a little salt/freshly crushed black pepper. Bake for 15-20 minutes, or until tender. It’s important not to peel the carrots for roasting. The skin holds in the tenderness of the carrot, and almost becomes caramelised (yes plz), also it’s wasteful to peel them! Top with a little chopped parsley & serve. Buon appetito!
