Vegan Apricot Galette


Somethin' sweet ;)

For the Crust:

250g flour

150 mL walnut oil

Pinch of salt

Pinch of cinnamon

Ice Water, qb

For the Filling:

3 ripe apricots, sliced

5 fresh figs, mashed

1 tbsp sugar

150 mL water

Preparation: Combine flour, salt, sugar, and cinnamon in a large bowl. Mix in the walnut oil until clumps form. Add ice water a little at a time until dough holds together, but is not at all sticky. Wrap tightly in plastic and refrigerate 1 hr. Cook the mashed figs with 1 tbsp sugar, and 150 mL water in a pan until reduced to jam consistency. Mix with the apricot in a bowl. Roll the dough into a circle between two pieces of waxed paper, and transfer to a parchment-lined baking sheet. Add the filling to the center of the pastry, leaving 2-3 inches of edge. Fold one part of the circle sideways about 2-3 inches to connect the pastry, and cover part of the filling. Continue this to make the galette shape. Bake for 25 mins at 400°F. Et voila!
