Cauliflower Bake

My comfort foods are basically anything with warm, homemade tomato sauce. This cauliflower bake takes on a whole new meaning for comfort food. It’s warm, filling, nutritious, simple to make, and so so good.

What You’ll Need:

  • 1 head cauliflower

  • 1 cup homemade tomato sauce

  • 1/2 cup chopped spicey olives

  • 1 zucchina, chopped

  • 1 large carrot, chopped

  • 1 cup wilted spinach

  • s&p to taste

  • *if you want everything to stick together better, add an egg. But ok to omit if you want to keep it vegan

Preparation:

Break apart the cauliflower and put it in a food processor. Pulse it until it turns to “rice” size. This is totally optional, but I found it more fun to eat/easier to digest than bigger pieces. In a large bowl, mix all other ingredients with a little olive oil. Brush a 9x11 in (23x28cm) glass baking dish with olive oil. Bake low & slow on 300°F (150°C) for 30-40 minutes, drizzling olive oil halfway through.
