Hearty Stuffed Portabello

What You’ll Need:

(Serves 4)

-4 portobello mushrooms

-my beet farro


140°C (280°F) for 30 minutes for the portobellos in the oven, then in a pan I sautéed fennel, onion, herbs, Swiss chard. I boiled farro for 10 minutes & added it to the pan to mix everything together with my citrusy beet purée. Buon appetito!
