Orange Zest Roasted Beets

 I'm normally not a fan of beets, but slow roasted with a squeeze of lemon juice, orange zest, freshly chopped parsley, and a pinch of salt...ci sta. Wash each beet and wrap in foil with some course sea salt roast for 30 mins on 200^C. Let cool, peel the skin, and slice'n'dice. Drizzle fresh ligurese olive oil, orange zest, juice of half a small lemon, fresh parsley, and a pinch of salt. Eat 'em colddddd they're devine.
