Sweet Potato Crostini


Serves 2!

What You'll Need:

- 2 sweet potatoes, sliced vertically

- 1 cup tomato sauce

- handful of fresh spinach, chopped

- roasted chickpeas

- handful of sunflower sprouts

- s&p q.b.

Preparation: Roast sliced sweet potato at 425°F for 25 minutes or until slightly crispy. Sauté spinach in a medium-sized pan. Remove potatoes, top with tomato sauce, spinach, chickpeas and sprouts. Buon appetito!
