Messy Anti-Inflammatory Salad

Messy anti-inflammatory salâd 🌱 during this time of year, though, I really can't get enough of beets...especially raw 🤯 I grated them, chopped some chicory, added a sprinkle of salt, lemon juice, orange zest, toasted pistacchio and some anchovies 🐟 I thought I would still be incredibly hungry afterwards but holy moly it was so good and filling!
