Moroccan-Inspired Mushrooms
What You'll Need:
-16 oz cremini mushrooms, trimmed and cleaned
-1/2 cup veggie broth
-3 tbsp grain mustard
-1 tsp turmeric
-1 small yellow onion, chopped
-3 cloves garlic
-2 tsp ginger
-1 tsp honey
-pinch cayenne
-parsley, chopped
-1/4 tsp black pepper
1/4 tsp salt
Preparation: Inspired by my recent travels through Morocco, this mushroom dish is PACKED with flavor. In a large pan, sauté the onion with all of the spices (turmeric, ginger, black pepper, cayenne) garlic, and salt until golden brown. Add the vegetable broth. Bring the broth to a light simmer then add the mushrooms, honey, and mustard. Cook until the broth has reduced by 3/4. Stir in parsley and serve!
