Roasted Squash Balls

Roasted Squash Ballz 😋 rolled in chopped pumpkin seeds and rosemary I made for @storykitchen.re open mic night on Wednesday's 1 kabocha squash = about 50 ballz. Peel and chop the squash, pan roast with 1 large white onion, olive oil, salt and pepper until cooked through. Let cool and mash with a potato masher. Optional, but delicious, add 100g FRESHLY grated parmigiano reggiano cheese. Chop some toasted pumpkin seeds with rosemary. Slightly wet your hands and roll the squash into ballz. Roll them in the seeds, and serve with traditional balsamic vinegar (not the di Modena IGP garbage that has caramel coloring added). Buon appetito!
