Dark Chocolate Tahini Sunbutter Cups

Why buy the processed crap when you can make a clean, feel-good version at home?? Warning: highly addictive. I turn into the Cookie Monster of buttercups around these things

What you’ll need:

(Makes 12 cups)

- 2 bars dark chocolate (over 85%! 100% if you're as wacky as me)

- 1,5 cups sunflower seeds

- pinch of salt

- 2 tbsp tahini

- 1 tsp cinnamon 

Toast the sunflower seeds by moving them around a dry pan on low heat until you start to smell the nutty goodness (about 3 minutes). Blend them in a food processor while still warm with all other ingredients (except chocolate) until the texture becomes like peanut butter. Melt chocolate by boiling water in a small pot and placing the chocolate in a heat-safe bowl over the boiling water. Line the base of each muffin tin (works best with silicone!) with just enough chocolate to cover the bottom. Scoop about 1/2 of a tablespoon of sunbutter into the center of each muffin tin, and flatten each mound with the back of the spoon, leaving a small amount of space between the edge of the sunbather and the side of the muffin mould. Cover the sunbutter in more melted chocolate, let set, and enjoy!
