Lentil & Chicory Soup

Sometimes the simplest things taste the best ☺️❤️ this soup took 20 minutes to cook up & -5 minutes to fill my belly. Slice half an onion in thin slices and sauté in low heat with pugliese olive oil and a sprig of thyme in a pot. Finely shop 4-5 leaves of chicory and sauté with the onion. Add a handful of lentils per person to the pot and toast the lentils with the onion. Add salt & pepper to taste. Add 3 tbsp crushed tomatoes and 4 cups water and let simmer for 20 mins or until lentils are cooked.
